This is a great recipe for a home-made burger. It’s easy to prepare, and very tasty. Enjoy !
Preparation time is about 15 minutes. Cooking time is 30 minutes.
You will need a hand blender.
I’ve garnished this burger with guacamole and kale.
For the burger …
1 large beetroot, or 2 medium sized beetroots.
1/2 teaspoon of tumeric
1 teaspoon of tahini
About 400g of chickpeas. 1 can of chickpeas should do it.
4 tablespoons of brown rice flour
1/2 teaspoon of chilli
2-3 cloves of garlic
A good quality olive oil … about 3-4 tablespoons
3 tablespoons of lemon juice
1 teaspoon of cumin
1 teaspoon of paprika
salt and pepper to taste
Juice of 1 lemon
4 tablespoons of chia seeds
For the Guacamole …
1 Large ripe avocado
1/2 lemon, squeezed
salt and pepper
For the Kale …
1 good handful of kale, chopped
Preparing the burgers …
Add the chia seeds to a small bowl, cover with water and squeeze the juice of a lime into it. Set aside for 10-15 minutes to allow the chia seeds to soak up the water and lime.
Peel and grate the beetroot, set aside.
Add the chickpeas, garlic, olive oil, lemon juice, tahini and other spices to your blender. Blend until you get a smooth texture.
Combine the beetroot, blended mix, rice flour and chia seed mix. Use your hands to mix this altogether, mix thoroughly until the consistency of the mixture is the same throughout.
Take a handful of the mixture, and form into a burger shape. Repeat until you have enough burgers for the meal you are making. Place the burger’s onto a baking tray and place in an oven pre-heated to 200 degrees. Bake for 30 minutes until the burgers start to go golden brown.
Preparing the Guacamole …
Peel the avocado, and remove the stone.
Chop and mash the avocado. Add salt and pepper to taste, squeeze the juice of half a lime into the avocado. Mix with a spoon. Set aside.
Preparing the Kale …
Place the Kale onto a baking tray, and drizzle with a good quality olive oil. Add salt to taste.
Use your hands and ‘scrunch’ up the Kale. You essentially want to make sure that the olive oil evenly covers all of the Kale. If its evenly covered it will cook better.
Place the Kale in the oven alongside the burgers, cook for no longer than 7 minutes. When cooked, the texture of the Kale should be slightly crispy. Be careful not to burn the Kale.
Thats it, easy peasy ! Once you are satisfied the burgers are cooked through, remove from the oven. If you like, you can toast the burger buns before serving. Spread the guacamole on both burger buns, add your burger and top with kale.
